The Grove
It had to be right. Tradition dictated what was required. With 12 months of research, consulting and inspecting of properties the ideal location was identified. Jo knew they had found what is known in wine talk as ‘Terrior’. That ideal combination of soil and climate. Sandy loam over limestone, long sunny summers and cold winters. All this combined with Jo’s vision of a partnership with Earth would provide arguably the home of the best olives in Australia or the world.



Trees & Planting 
The project involves the establishment of some 1,600 hectares of olive grove. At the present time, there are approximately 120,000 trees already planted in Coonalpyn, (located 60 kilometres South East from The Big Olive).

Some 17 different varieties are being used, with principal varieties including Frantoio, Leccino, Picual, Nevadillo Blanco, Mission, Barnea, Coratina for oil producing and, Manzanillo (dual purpose), Kalamata, Spanish Queen, Barouni, and Mediterranean for table olives.

Creating Diversity
In addition to the olives, a further 61 hectare vineyard and fruit orchard has been established, comprised of: 10,000 Pine Nut trees, 5,000 Pomegranate trees, 5,000 gourmet Fig trees, and preparation for the planting of some 50,000 Almond trees.

These other fruit and nut varieties will be used to expand the range of products available at The Big Olive. The products will combine with our olive products to enhance The Big Olive experience. For example; balsamic vinegar, Pomegranate concentrate, whole nuts, dukkah, and all manner of delicacies marinated in Extra Virgin Olive Oil.
