At the Big Olive we believe it is paramount to know when to harvest the olive fruit. Oil and moisture content is very critical in achieving optimum quality of Extra Virgin Olive oil. Olives should be harvested when the oil content is at a maximum in the fruit. Delaying harvest may compromise the character of the oil and reduce the yield. It is also important to monitor the moisture content of the fruit as it has a great bearing on the extraction efficiency during processing.
The Big Olive has developed a system and a service to the growers to assist them in quickly determining the optimum harvesting time for each olive variety.

Growers can register with us and by supplying us with approximately 200 grams of fruit to our laboratory, with the use of our infrared technology we can instantly determine the moisture/oil content and recommend the optimal harvest time.
It is important to register with us early enough in order to plan harvest and processing.
Olive Crushing & ProcessingJo Hani, the founder of the Big Olive designed and built the facility to accommodate the Rapanelli olive oil processing plant incorporating the ‘Sinolia’ Cold Press and Double Extraction method from both the Melaxer and Decanter. (Refer our Processing Method).

The Plant has been designed with expansion in mind to accommodate the processing of up to six lines to be in modular form in the future, hence being able to dedicate in the future lines to accommodate big olive growers under contract at the required harvest time without delay.
Contract ProcessingFor our regular contract growers we offer services second to none. As we consider these growers to be our staunchest allies in the growth of the olive industry in Australia, our most important goal is to process their oil incorporating a synergy of services in the processing deal and to provide the highest quality oil. Emphasis on cost savings in the provision of multi services can be incorporated. We would advise Growers to make arrangements early, well prior to harvesting time so we can both work toward making arrangement for storage and the eventual Purchase/Sale or Bottling of their oil.

Facility description & LocationThe Big Olive is a regional centre of services to Olive Growers. It provides a purpose built Olive Crushing, Processing, Storage, Bottling and Packaging Plant.
It incorporates the latest technology in ‘state of the art’ equipment in all facets of the production of olive oil and olive pickling and is an accredited food-handling centre. It is located at the SA Agri-Industrial Trade Park precinct in Tailem Bend at the junction of three major highways, Dukes, Ouyen and Princes. It is only 45 minutes drive on the South Eastern Freeway from Adelaide towards Melbourne and Sydney. Geographically exposed and positioned to attract growers from all regions of South Australia and Victoria.

Purchasing Growers’ Oil Growers should appreciate that our partnership begins long before they bring the olives to the factory. It is important to plan the sale and distribution of their oil early and while the fruit is still on the tree.
As a contract grower we place a lot of emphasis on selling your oil well before it is harvested. We believe that our job commences with your commitment to process your olives with us. We are also interested in your oil and some arrangement can be made for purchasing part of it as soon as processing is complete and tests have been carried out to check its quality and taste.

Fruit Delivery to the Big Olive BOOK FIRST!Olives can be delivered to our plant in trucks or vented bins. The Big Olive can assist if required. Arrangements can be made for any other alternative method.
Table Olive Grading and PackagingThe Big Olive is able to assist Table Olive Growers in the grading and packaging of their olives and sending them to market. At our factory we have a ‘Ten grade’ olive grading and sorting machine that can be hired on the premises or arrangements can be made for our staff to do the job for you.

Bottling & Packaging The Big Olive is home to five (5) state-of-the-art bottling lines. Each line is designed to accommodate the size and design of bottling and packaging purpose.
Gift Manual filling Line – this line is designed to package unique bottles and containers. It is to bottle small orders of packaging such as gifts, Christmas presents and Company logo labeled bottles. It can bottle up to 800 bottles per hour
Small bottles line - this line is designed for small bottles ranging in size from 10ml to 100ml (i.e. miniature bottles). It can bottle up to 1500 bottles per hour
Commercial Super Line – this line is for the fast commercial orders. We have the ability to bottle both round and square bottles ranging in size from 250ml to 1 litre. This line has the ability to bottle up to 4500 bottles per hour.
Cask Filling Line – this line is capable of packing casks sizes ranging from 2L, 3L and 5L.
Tin Filling Line – This line is capable of filling tins in range of 1L, 2L, 2.5L and 3L.
Bottling & Packaging Charges Depending on the bottle size, packaging requirements, supply of olive oil and the amount to be packaged, the Big Olive will be happy to negotiate a very attractive rate to growers, distributors and on sellers.
